Veggie Frittata

Ingredients

  • 6 eggs
  • 2 tbsp milk
  • 1 tsp oil
  • (Optional) black pepper
  • Choice of vegetables (chopped tomatoes, grated courgette, chopped red pepper etc.)

Instructions

  1. Turn on your grill to warm.
  2. In a frying pan heat the oil and then add the vegetables and cook on the hob for 3-4 minutes, stirring often, until soft.
  3. Spread out over the base of the frying pan.
  4. Beat the eggs, milk and pepper together and pour into the frying pan. Cook over a medium low heat for 4-5 minutes to set the base.
  5. Transfer to the grill to for about 2-3 minutes. Remove from the heat and let the frittata cool for 3-4 minutes. Be careful, the handle may be HOT.
  6. Take care not to cook over a high heat, or else the base could brown too much before the middle of the frittata is cooked.
  7. Slice the frittata into wedges and serve.

Extras

You can use many different vegetables in your fritatta. It can be eaten warm straight from the pan, or saved in the fride for lunch the next day!
