Summer Salad

Summer Salad


  • 2 eggs
  • 10 cherry tomatoes
  • 100g iceberg lettuce
  • 100g cheese, grated
  • 2 apples 
  • 1 tin sweetcorn


  1. Hard boil the egg for 10 minutes in a saucepan of boiling water.
  2. Cool under cold running water and peel off the shell and cut into six pieces.
  3. Core and chop up the apple.
  4. Quarter the cherry tomatoes.
  5. Drain the sweetcorn.
  6. Put salad leaves in a bowl and scatter over the corn, tomatoes, apple, cheese and egg.


Try adding some cooked chicken or tinned tuna for a more filling lunchtime meal.
