Ingredients

  • 4 baking potatoes
  • 100g of grated cheddar cheese
  • 4 rashers of bacon
  • Splash of milk
  • Teaspoon of margarine/butter

Instructions

  1. Preheat the oven to 220°C/Fan 200°C/Gas Mark 7.
  2. Prick the potatoes all over with a fork.
  3. Put the potatoes on a baking tray and bake for one hour. Turn halfway through.
  4. Remove from the oven, allow to cool before cutting the potatoes in half. Scoop the insides into a mixing bowl, keeping the skin intact.
  5. Chop the bacon into small pieces and fry until cooked.
  6. Mash the potato with butter and milk. Add in the cheese and bacon and mix.
  7. Scoop the mixture into the skins.
  8. Return to the oven for 15 mins until crispy and gold on top.

Dip in sour cream for an extra treat!
