Straight from the Fridge Omelette

Straight from the Fridge Omelette


  • 4 Eggs
  • 1 courgette, sliced
  • 1 tbsp olive oil
  • 2 handfuls of frozen peas
  • Salt
  • (Optional) 15g cheese, grated


  1. Heat the oil in a non-stick frying pan and add courgette. Cook for a couple of mins until golden.
  2. Break the eggs into a bowl and beat with a fork. Season with salt (optional).
  3. Add peas, pour in the eggs and sprinkle with cheese.
  4. Turn down heat to low and cook for 10 mins until eggs are almost set.
  5. Heat the grill to high and pop the pan under grill for 1-2 minutes.
  6. Place a chopping board or plate over the pan and flip over.
  7. Cut the omelette into 4 and serve.


Serve with salad, coleslaw, baked beans or potato wedges!
