Pizza Muffins

Pizza Muffins


Makes 12 muffins.

  • 250g self raising flour
  • 150g cheddar cheese, grated
  • 150g cherry tomatoes, halved
  • 150ml milk
  • 75g pepperoni, chopped
  • 75g butter, melted
  • 2 medium eggs
  • 2 spring onions, chopped fine
  • 1 tsp dried oregano
  • (Optional) 2 tbsp red pesto


  1. Preheat the oven to 180°C/Gas Mark 4 and fill a baking tray with 12 paper cases.
  2. To a bowl add the egg, milk & melted butter and whist gently with a fork.
  3. Add the pesto, cheese, tomatoes, pepperoni, spring onion and oregano and mix.
  4. Finally add the flour & mix just enough until all the ingredients have combined.
  5. Divide the mixture between the 12 paper cases.
  6. Bake in the oven for 20-25 minutes. To check they are cooked put a knife into the middle of pizza. If the knife comes out dry and with no mixture on it, your pizzas are ready to serve and enjoy!
