Amity Hub Special Chilli Con Carne


  • 400g lean beef mince
  • 300g white rice
  • 1 tin red kidney beans, drained
  • 1 tin chopped tomatoes
  • 1 Onion, diced
  • 2 tbsp tomato puree
  • 2 tbsp chilli powder
  • 2 tbsp ground cumin
  • 1 tsp ground black pepper
  • 1 tsp salt
  • 1 tbsp garlic powder


  1. Add oil and onion to pan and cook for 5 minutes. Stir to make sure it doesn't burn.
  2. Add the mince, cook for 6-7 minutes until the beef is browned.
  3. Start cooking the rice. Read the packet for instructions.
  4. Add the spices. If it looks dry, add a little boiled water.
  5. Add tomato paste, chopped tomatoes and kidney beans. Gently mix all together in the pan and simmer gently for 5 mins, stirring occasionally. Then allow to rest whilst rice is cooking.
  6. Drain the rice and serve on plates or in bowls.


For a vegetarian meal, swap beef mince for Quorn or soya mince.

You can also swap the rice for potato wedges, or add a side of garlic bread!
