Ingredients

  • 1 Pack of fish pie mix (look in the fresh fish section of the supermarket, or go to a fishmonger)
  • 450g potatoes, peeled
  • 75g sweetcorn
  • 100ml milk
  • 1 tbsp of oil
  • 1 egg, beaten
  • Spring onions, chopped fine
  • Cheese, grated (about a handful)
  • Pepper
  • Flour
  • Butter

Instructions

  1. Cook the potatoes in boiling water until tender. Drain and return to the pan on a low heat for another minute or two to remove the last of the liquid. Mash the potato with a small knob of butter and allow to cool.
  2. Put the fish in a pan with the spring onions and milk. Cook on low until the fish is cooked through and breaks into easy flakes.
  3. Drain the fish and spring onions through a sieve. Return to the pan to mix in the potatoes, sweetcorn, cheese and a pinch of pepper. Then shape into 6-8 burgers.
  4. Pour the beaten egg into a bowl and scatter the flour onto a plate. Dip a burger into the egg and then the flour. Place on a baking tray. When all burgers are on the tray, place it in the fridge for 30 minutes.
  5. Fry burgers with a little oil over a medium heat for 5-7 minutes on each side or until golden brown.

Extras

Serve the burgers with baked beans or a salad.
