Slow Cooker Chicken Casserole


  • 800g skinless, boneless chicken thighs/breast/fillets
  • 2 medium onions, peeled and chopped
  • 4 carrots, peeled and diced
  • 2 celery stalks, chopped
  • 500g potatoes, peeled and chopped
  • 500ml boiling water
  • 2 stock cubes
  • 2 cloves garlic, crushed
  • Salt and pepper


  1. Add all the ingredients into the slow cooker.
  2. Set the slow cooker to low and cook for up to 8 hours (minimum 4 hours).
  3. Check the chicken is cooked through and that there are no pink bits.


Try adding more vegetables, like swede, parsnip or peas. For a richer taste add mixed herbs or a tbsp of mustard!
