Ingredients

  • 500g reduced fat beef mince
  • 1 onion chopped
  • 2 garlic cloves, crushed
  • 2 carrots, sliced
  • 2 sticks of celery, sliced
  • 120g frozen peas
  • 2 tbsp tomato puree
  • 480ml beef or vegetable stock
  • 2.25lbs potatoes, sliced thin
  • 1 tbsp cooking oil
  • Salt and pepper

Instructions

  1. Turn on oven to 200°C/Gas Mark 6.
  2. Add oil to pan and brown the mince with the garlic, celery, onion, and carrot for about 5 minutes.
  3. Add the beef stock, tomato puree and bring to a boil.
  4. Reduce the heat, cover and simmer for 10 minutes to reduce down slightly and thicken.
  5. Add the frozen peas. Season with salt and pepper to taste.
  6. Put the mixture in an ovenproof dish.
  7. Lay potato slices on top of the meat mixture overlapping slightly as you layer.
  8. Cover with foil and bake in the oven for about 35 minutes. Remove foil and return to the oven for a further 25 minutes until the potatoes are golden on top.
  9. Serve with your choice of vegetables.
