Stuffed Peppers with Couscous

Stuffed Peppers with Couscous


  • 1 packet of couscous
  • 160ml boiling water
  • 2 large peppers or 3 smaller (ideally red, yellow or orange)
  • 1 small courgette
  • 1 small mushroom
  • 1 small tomato
  • 1 tablespoon of tomato puree
  • 4oz grated cheese


  1. Preheat oven to 180°C/Gas Mark 5.
  2. Place couscous in bowl and add 160ml of boiling water. Stir, cover and leave for 5 mins.
  3. Prepare the vegetables cutting them into small pieces.
  4. When 5 mins are up add a tablespoon of tomato puree to the couscous and mix well.
  5. Add the chopped veg and mix.
  6. Add cheese and mix again.
  7. Slice peppers in half and remove seeds.
  8. Stuff peppers with mixture.
  9. Wrap each pepper in tin foil and then place in the oven for 20/30 mins.
  10. Remove from oven and serve.


Serve with baked potatoes, or a salad.
