Chilli Con Carne

Chilli Con Carne


  • 400g can of kidney beans
  • 400g can chopped tomatoes
  • 300g of beef mince
  • 300g of rice
  • 150g mushrooms, sliced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 tbsp cooking oil
  • 1 tsp chilli powder
  • 1 tsp cumin
  • 1 tsp paprika


  1. Heat oil in a large pan on a medium heat and add onion.
  2. Add mince and continue to fry.
  3. Stir in the spices and continue to fry.
  4. Add the mushrooms and tomatoes.
  5. Pour water into the pan, then add kidney beans and continue to stir fry.
  6. Once ingredients are mixed together, bring the mixture to the boil. Simmer on a low heat for 30 minutes stirring occasionally.
  7. Place water and rice in a large pan. Stir and simmer on a low heat for about 10 minutes or until rice is soft. Add more water if needed.
  8. When the rice and chilli are ready, serve and enjoy!


For extra flavour add Worcestershire Sauce, horseradish and a couple of squares of dark chocolate!


Swap soya mince for beef mince to make a veggie meal. Please be aware some people may have allergic reactions to soy.
