Jacket Potato with Tuna and Sweetcorn

Jacket Potato with Tuna and Sweetcorn


  • 4 baking potatoes
  • 1 tsp olive oil

For the filling:

  • 4 tbsp mayonnaise
  • 325g tinned sweetcorn, drained
  • 2 x 145g tins tuna in spring water, drained


  1. Preheat the oven to 200°C/Gas Mark 6.
  2. Rub the potatoes with the oil, transfer to a baking tray. Bake for 1hr 15mins or until the skin is crispy and the flesh inside is tender.
  3. Or, microwave the potatoes for 10 mins on high, then rub with oil, before baking for 20 mins to crisp up. This method is quicker.
  4. Meanwhile, mix the mayonnaise with the tuna and sweetcorn.
  5. Cut open the cooked potatoes and top with the tuna mix.


Change the fillings for your favourites. Try cheese, baked beans, cooked bacon or chicken, or even just plenty of butter!
