Super Easy Lasagne

Super Easy Lasagne

  • 8-10 dried lasagne sheets
  • 500g minced beef
  • 400g tin of chopped tomatoes
  • 150g frozen vegetables
  • 75g cheese, grated
  • 150ml creme fraiche
  • 100ml of vegetable stock
  • 1 onion, chopped
  • 1 garlic clove, crushed
  • 1 tsp olive oil
  • (Optional) 1 tsp oregano
  • Salt and pepper

  1. Preheat the oven to 200°C/Gas Mark 6.Heat the oil in a frying pan. Fry the onion for 2-3 minutes then add the garlic and cook for a further minute.
  2. Add the minced beef. Stir often to ensure it doesn’t stick or burn.
  3. Once browned add the frozen vegetables, tomatoes, stock mix, oregano and seasoning. Add more water if the mixture seems too dry.
  4. Stir and then continue to cook on high for approximately 7 minutes. Once cooked remove from the heat and start to make your lasagne.
  5. Make the lasagne by doing layers of the beef mix and the lasagne sheets. On top of each sheet add creme fraiche and cheese. Make sure the top of the lasagne is a pasta sheet with extra cheese.
  6. Put the lasagne in the oven. Bake for 15 minutes or the lasagne is cooked. You can test by inserting a knife. If it's ready the sheets will be hard and the knife will be hot to the touch.

Serve with a side of garlic bread.
