Easy Banana Bread and Butter Pudding

Easy Banana Bread and Butter Pudding


  • 4 slices of bread
  • 450ml milk
  • 85g soft, light brown sugar, plus 1 tbsp extra to sprinkle over the top
  • 50g butter, softened
  • 2 eggs
  • 1 large banana, peeled and sliced
  • 1 tbsp cornflour
  • (Optional) Large pinch cinnamon


  1. Toast the bread, spread with butter and cut each slice into 6 equal pieces.
  2. Place the bread in a bowl, butter side up, and top with the banana.
  3. In a small bowl, add the cornflour with a little of the milk, mix until smooth.
  4. Beat together the eggs, sugar, cinnamon and rest of the milk in a jug. Add the cornflour mixture into the jug and stir.
  5. Pour the mixture over the bread and banana, then sprinkle with the extra sugar. Cook, uncovered, in the microwave on high for 8-10 mins.
  6. Stand for 5 mins before serving.
