Choc Chip Cookies

Makes 20.

  • 300g plain flour (sifted)
  • 225g caster sugar
  • 200g of margarine, melted
  • 1 egg
  • 1tsp vanilla extract
  • 1tsp of baking powder
  • A pinch of salt
  • 100g chocolate or chocolate chips (If you want to make extra chocolaty cookies use 200g)

  1. Preheat oven to 160°C/Gas Mark 3.
  2. Melt margarine in the microwave.
  3. Add the sugar to the margarine and mix together.
  4. Add the flour, baking powder, vanilla and salt to the mixture.
  5. Add the chocolate chips.
  6. Mix together and then add the egg.
  7. Spread some margarine onto a baking tray.
  8. Take some of the dough and place even sized balls on the baking tray. Don’t put the biscuits too close to each other otherwise they will get stuck together.
  9. Place in the oven and bake for 10-20 mins. They are ready when the edges are a bit golden.

Try different things in the mix! Here's a few ideas:

  • White choc chips
  • Dark choc chips
  • Peanuts
  • Almonds
  • Pecan nuts
  • Dried fruit (sultanas/mango/apricot)
  • Salted caramel chunks
  • Pretzels
