Banana Loaf


  • 100g softened margarine
  • 175g caster sugar
  • 2 large eggs
  • 2 ripe bananas
  • 225g self-raising flour
  • 1 tsp baking powder
  • 1 tbsp milk


  1. Preheat the oven to 180°C/Fan 160°C/Gas Mark 4.
  2. Use margarine to grease a loaf tin then line with baking paper.
  3. Add ingredients to mixing bowl. Beat well for 2 minutes until blended.
  4. Spoon the mixture into the tin.
  5. Bake in the oven for 1 hour, until well risen and golden brown.
  6. Leave to cool on a wire rack.
