Banana Pancakes

Banana Pancakes


  • 4 eggs
  • 2 bananas
  • Oil


  1. In a bowl mash the banana with a fork until it resembles a thick puree.
  2. Beat the eggs in a bowl and stir in the banana mixture.
  3. Heat a large non-stick frying pan with 1/2 teaspoon of oil or spray oil
  4. Using 1/4 of the batter, spoon 2 pancakes into the pan and cook for 1-2 minutes on each side.
  5. Repeat the process with the rest of the batter to create 4 servings.


You can add fruit and yoghurt for a tasty extra! Or try adding a drop of vanilla essence to the egg mixture before cooking!
