Slow Cooker Minestrone Soup


  • 400-500g diced beef
  • 1 onion, chopped
  • 3 carrots, chopped
  • 2 celery sticks, chopped
  • 2 medium potatoes, peeled and cubed
  • Parsnip or turnip, peeled and diced
  • 500ml beef stock
  • Add herbs, pearl barley or lentils if required
  • Gravy or cornflour to thicken sauce after cooking (mix gravy granules/cornflour or flour with a little water)
  • Salt and Pepper to taste


  1. Add all ingredients to slow-cooker except for the thickener.
  2. Cook on high for 4-5 hours or 8 hours on low - stir occasionally.
  3. After 5 hours turn to low if required.
