Slow Cooker Minestrone Soup

Slow Cooker Minestrone Soup


  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery sticks, chopped
  • 2 garlic clove, crushed
  • 400g tin chopped tomatoes
  • 1 tablespoon tomato puree
  • 2 pints of chicken stock
  • 100g frozen vegetables - any sort
  • 400g tin of Cannelloni Beans
  • 100g dry pasta


  1. Add all ingredients to the slow cooker except the pasta and beans and cook for 4 hours or until vegetables are soft.
  2. Add pasta and beans, stir well and continue to cook for 30 mins or until pasta is soft.
  3. Serve with bread


  • Fry bacon pieces till crispy and add to slow cooker for added flavour.
  • Great for using up any vegetables that are going out of date.


Swap the beans for kidney beans.
